Chicken and Broccoli
Serve 1~2
Ingredients:
Chicken Breast 250g cut into slices
marinate with ingredients below and set aside:
salt 1/4 tsp
pepper 1/4 tsp
cooking oil 1 tbs
egg white 1
corn flour 1/2 tsp
cooking oil 1 tbs for stir frying
Water enough to cover vegetables for boiling.
salt to taste 1 tsp
Broccoli 200g cut into bite size pieces
baby corn a few cut into bite size pieces
chopped garlic 1 tsp
chopped ginger 1 tsp
soy sauce 1 tbs
oyster sauce 1tbs
sugar 1 tsp
rice wine 1 tbs
chicken stock or water 200ml
corn starch solution for thickening 1 tbs
soy sauce to colour 1 tsp ( optional)
cooking oil 1 tbs for stir frying
Methods:
1. Heat up wok with medium flame , add in oil to coat the wok, add in chicken slices and cook on one side.
2. flip for another side to continue cooking. after cooked set aside.
3.with some oil left over in the wok,pour in water and bring to boil. add 1 tbs salt. Add in broccoli and baby corn, when see the color changed darker, use a fork to test the doneness, cook longer for softer texture.Drain and set aside after cook.
4.Por away water , clean the wok , heat up again ,add in 1 tbs oil add in chopped garlic and chopped ginger , stir until fragrant.
5.Add in blanched broccoli and baby corn , slightly toss and stir fry.
6. Add in chicken slices and stir for a few seconds, add in soy sauce, oyster sauce , rice wine and sugar to taste , stir fry.
7.Add in chicken stock and toss , add in corn starch solution and mix well. Lastly we fine tune the color with some soy sauce.
Serve hot and Enjoy~!
